Nordic Alpine Anchovy and Reblochon Canapé
I wish I was still on holiday!
This anchovy and Reblochon Canapé is an experiment in the Nordic Alpine crossover. Usually, the Reblochon cheese is paired with bacon or lardons but here with anchovies, which are dissolved in the frying pan alongside onions.
The anchovies and cheese complement each other beautifully as anchovies have an equivalent depth of flavour and saltiness to the bacon.
I absolutely love anchovies as they are so versatile and integral to Swedish cuisine. When cooked, the usual punchy taste is transformed into a deep, round flavour. If you are not a fan of this salty fish, I urge you to have another go.
If you cannot find Reblochon, substitute it for another wonderfully stinky cheese as long as it is soft and easily melts. For example, you could try Tallegio, Raclette, or a ripe Camembert.
In any case, you will impress on your family or guests with this amazingly simple and super tasty canapé.

INGREDIENTS
1/2 Reblochon cheese
8 anchovies in oil
1 yellow onion
Rapeseed oil for frying
Pepper
METHOD
1. Preheat the grill to 175°C
2. Fry the onion in oil until transparent and golden. Add the anchovies and cook and stir until dissolved. Season with pepper.
3. In the meantime, cut the baguette into thinnish slices and the Reblochon into medium slices.
4. Top the baguette slices with the anchovies mix and the Reblochon and grill in the oven until the cheese sizzles.
5. Serve immediately to your family or guests.
